Aromas of intense berry and dark cherry fruit, laced with rich notes of coffee, chocolate, fig, tobacco and toasty oak. Complex, vibrant and bold. Dense and full, with an alluring blend of plum, cocoa, sage, vanilla, and black cherry flavors that meld seamlessly on the palate. Rich tannins and structure frame the rich, round mouthfeel, integrated and balanced, with a long supple finish of ripe plum and mocha.
Vineyard Notes:
2007 was a very good vintage, a low rainfall year with small crop and excellent flavor intensity. Oakville received just 21 inches of rain versus the typical 35, leading to smaller canopy growth, and acceleration of maturity. Harvest was one week ahead of normal, two weeks ahead of 2006. The summer had steady, even temperatures, peaking with a heat spell around Labor Day, and cool weather thereafter. Cabernet was harvested between October 5-15 on our Oakville Estate, and reds exhibit rich, vibrant fruit character, and elegant structure.
